You are correct that the photo needs to have signage or wordage as proof.

I googled the World’s Largest Letter “M” in Platteville and there is a plaque that states what it is: https://en.wikipedia.org/wiki/Platte_Mou...Plaque.jpg

Second question;"home of the ........est" counts and you only need a picture of the sign.
But it would be more fun to take a picture of the object as well.
